Processed foods lack essential nutrients from "summary" of Staying Healthy with Nutrition, rev by Elson Haas,Buck Levin

Processed foods are those that have been altered in some way from their original state before consumption. Many of these alterations involve the addition of various chemicals, preservatives, colorings, and flavorings to enhance the taste and appearance of the food. However, these additives do not contribute to the nutritional value of the food and can even be harmful to health in the long run. One of the key problems with processed foods is that they often lack essential nutrients that our bodies need to function properly. During processing, many of the natural vitamins, minerals, and other important nutrients are stripped away, leaving behind only empty calories. This means that even though processed foods may be filling, they do not provide the necessary nutrients that our bodies need to thrive. In addition to the loss of essential nutrients during processing, many processed foods also contain high levels of unhealthy fats, sugars, and sodium. These ingredients can lead to a host of health problems, including obesity, diabetes, heart disease, and high blood pressure. Furthermore, the lack of fiber in processed foods can contribute to digestive issues and weight gain. When we rely on processed foods as a significant part of our diet, we are essentially depriving our bodies of the vital nutrients they need to stay healthy and function properly. Instead of fueling our bodies with empty calories and harmful additives, we should focus on consuming whole, unprocessed foods that are naturally rich in nutrients. By choosing whole foods such as fruits, vegetables, whole grains, lean proteins, and healthy fats, we can ensure that our bodies are receiving the essential nutrients they need to thrive. Making this shift towards a whole foods diet can have a profound impact on our health and well-being, helping us to feel more energized, maintain a healthy weight, and reduce our risk of chronic diseases.
