In addition to the immune response triggered by gliadin, wheat consumption can also lead to the formation of advanced glycation end products (AGEs) in the body. AGEs are compounds that can cause inflammation and damage to tissues, including the joints. This can further contribute to joint pain and discomfort. Furthermore, wheat consumption can also lead to an increase in blood sugar levels, which can contribute to inflammation and pain in the joints. High blood sugar levels can promote the production of pro-inflammatory molecules in the body, exacerbating joint pain and other symptoms.
