Food should be fresh and seasonal from "summary" of Ayurvedic Cooking for Self-healing by Usha Lad,Vasant Lad

Fresh and seasonal food is a fundamental principle in Ayurvedic cooking. When we say food should be fresh, we mean it should be consumed as soon as possible after being harvested or prepared. Fresh food retains its life force and vital energy, which is essential for nourishing our bodies. On the other hand, if we consume food that is old or stale, it lacks prana (life force) and may not provide us with the nourishment we need. Seasonal food is food that is grown and harvested in its appropriate season. Nature provides us with different foods in different seasons, and our bodies are naturally attuned to these changes. Eating seasonal food allows us to connect with nature's rhythms and receive the nutrients that are best suited for each time of year. For example, in the summer, we are provided with juicy fruits and cooling vegetables to help us stay hydrated and cool. In the winter, we are given hearty root vegetables and warming spices to help us stay grounded and warm. By eating fresh and seasonal food, we can ensure that we are receiving the most nourishment from our meals. Fresh food is more vibrant and flavorful, making it a more enjoyable eating experience. Additionally, seasonal food is often more affordable and readily available, as it is in abundance during its peak season.
