Gluten may be problematic from "summary" of Food - WTF - Should I Eat? by Mark Hyman

Gluten may be problematic for some people. It's not just those with celiac disease who need to steer clear of gluten. Even those without celiac disease may have a sensitivity to gluten that can cause a range of symptoms. These symptoms can vary widely from digestive issues like bloating, gas, and diarrhea to neurological symptoms like brain fog, headaches, and fatigue. The truth is, gluten sensitivity is a real thing and can affect a significant number of people. Many experts believe that gluten sensitivity is vastly underdiagnosed. But why is gluten causing so many problems for people? One reason could be the modern way in which wheat is grown and processed. Wheat today is very different from the wheat our ancestors ate. It has been hybridized and genetically modified to contain more gluten, making it more problematic for our bodies to digest. Another issue is that gluten can cause inflammation in the gut, leading to a condition known as leaky gut, where the lining of the intestines becomes permeable, allowing undigested food particles and toxins to enter the bloodstream. This can trigger an immune response, leading to a host of symptoms throughout the body. It's important to note that not everyone will have a negative reaction to gluten. Some people can tolerate it just fine. But for those who do have a sensitivity, cutting out gluten from their diet can lead to significant improvements in their health and wellbeing. If you suspect that gluten may be causing you issues, it may be worth trying an elimination diet to see if your symptoms improve when you remove gluten from your meals. Remember, everyone is different, and what works for one person may not work for another. So listen to your body and pay attention to how you feel after eating gluten-containing foods.
