Insulin spikes from carbohydrate consumption worsen insulin resistance from "summary" of The Diabetes Code by Dr. Jason Fung

When we consume carbohydrates, our bodies break them down into glucose, which then enters our bloodstream, causing our blood sugar levels to rise. In response, our bodies release insulin to help regulate these levels by allowing the glucose to enter our cells for energy or storage. However, frequent and excessive consumption of carbohydrates can lead to repeated spikes in insulin levels, which can worsen insulin resistance over time. Insulin resistance occurs when our cells become less responsive to insulin's signals, leading to higher levels of insulin being released to try to compensate. This vicious cycle can eventually result in a decreased ability of insulin to lower blood sugar levels effectively, leading to further spikes in insulin production to try to overcome this resistance.
