Fresh food is more nutritious than processed food from "summary" of In Defense of Food by Michael Pollan

One of the key principles that emerges from the exploration of modern Western diets is the idea that fresh food is inherently more nutritious than processed food. This principle may seem obvious, but its implications are profound. The nutrient content of food is known to degrade over time, so the longer the time between when a food is harvested and when it is consumed, the less nutritious it is likely to be. Furthermore, the processing of food often involves the addition of various chemicals, preservatives, and additives that can further degrade its nutritional value. This not only diminishes the overall nutritional quality of the food but also introduces potential health risks associated with consuming these artificial additives. In contrast, fresh foods are typically in their natural state, with all of their original nutrients intact. When we consume fresh fruits, vegetables, and other whole foods, we are benefiting from the full spectrum of vitamins, minerals, antioxidants, and other beneficial compounds that they contain. These nutrients are essential for maintaining optimal health and well-being, and they are most abundant in foods that have been minimally processed or left in their natural state. In addition to their superior nutrient content, fresh foods also tend to be lower in unhealthy fats, sugars, and sodium that are commonly found in processed foods. By choosing fresh, whole foods over processed alternatives, we can avoid many of the health risks associated with consuming high levels of these unhealthy ingredients. This is why nutrition experts often recommend focusing on a diet rich in fresh, whole foods as a key strategy for improving overall health and well-being.
