Environmental impact matters from "summary" of Food - WTF - Should I Eat? by Mark Hyman

When we talk about food, we often focus on how it affects our bodies, whether it will make us gain weight or cause diseases. But there is another crucial aspect to consider - the impact our food choices have on the environment. What we eat not only affects our own health, but also the health of the planet we inhabit. The way our food is produced, processed, and transported can have significant environmental consequences. Industrial farming practices contribute to deforestation, soil erosion, water pollution, and greenhouse gas emissions. The use of chemical fertilizers, pesticides, and antibiotics further degrade the environment and harm ecosystems. The global food system is also responsible for a significant portion of greenhouse gas emissions, which are a major driver of climate change. Livestock production, in particular, is a major contributor to greenhouse gas emissions due to methane release from cows and other ruminant animals. The transportation of food over long distances also contributes to carbon emissions. In addition to greenhouse gas emissions, food production also contributes to other forms of environmental degradation, such as water scarcity and loss of biodiversity. The depletion of water resources for irrigation, the pollution of water bodies with agricultural runoff, and the destruction of natural habitats for agriculture all have serious consequences for the environment.
  1. We can make a positive difference for both our own health and the health of the planet. Choosing foods that are produced sustainably, locally, and with minimal environmental impact can help reduce our carbon footprint and protect natural resources for future generations. Ultimately, what we eat matters not only for our own well-being, but also for the health of the planet we call home.
