Wheat consumption can indeed lead to joint pain. But how exactly does this happen? When we consume wheat products, such as bread, pasta, and cereals, our bodies produce a protein called zonulin. This protein can cause the tight junctions between the cells of our intestinal walls to loosen, allowing substances to pass through that would normally be kept out. One of these substances is a protein called gliadin, which is found in wheat. When gliadin enters the bloodstream, the immune system identifies it as a foreign invader and mounts an attack.
