When we fast, our body goes into a state of low insulin. Since insulin is the hormone that tells our body to store fat, low insulin means that we stop storing fat. Instead, our body starts burning stored fat for energy. This process is known as fat oxidation. When we eat, our body uses the food we consume for energy. However, when we fast, our body has to turn to its fat stores for fuel. This is a natural response to not having food readily available for energy.
