Modern food lacks essential nutrients from "summary" of The Dorito Effect by Mark Schatzker

Today's food doesn't pack the nutritional punch it once did. It may look appetizing and convenient, but underneath the surface, it's lacking in essential nutrients that our bodies need to thrive. This deficiency is a direct result of the way our food has been industrialized and modified over the years. The rise of industrial agriculture has led to crops being bred for yield and appearance rather than for their nutrient content. As a result, the fruits and vegetables we consume today contain far fewer vitamins, minerals, and other essential nutrients than their counterparts from decades ago. This nutrient depletion has serious consequences for our health, as we rely on these nutrients to support our bodily functions and keep us healthy. In addition to the loss of nutrients in our produce, the modern food industry has also played a role in stripping our food of essential flavor compounds. This has led to a disconnect between the taste of food and its nutritional value. Without these natural flavors, our bodies struggle to recognize when we've consumed enough nutrients, leading to overeating and malnutrition. To make matters worse, the food industry has responded to the lack of nutrients and flavor in our food by adding artificial flavors and synthetic nutrients to enhance the taste and appearance of processed foods. While these additives may make our food more palatable, they do little to address the underlying issue of nutrient deficiency. In fact, they may even contribute to the problem by further distorting our body's ability to recognize and respond to the nutrients we consume. In order to truly address the issue of nutrient deficiency in modern food, we need to reevaluate our approach to food production and consumption. We must prioritize the quality and nutrient content of our food over convenience and appearance. By choosing whole, unprocessed foods that are rich in natural flavors and nutrients, we can ensure that our bodies receive the essential nutrients they need to function optimally. It's time to reclaim the nutrient density and flavor of our food and rediscover the true meaning of nourishment.
