Artificial flavors can be harmful to our health from "summary" of The Dorito Effect by Mark Schatzker

Artificial flavors are a curious thing. They are created in laboratories by food scientists, who meticulously analyze the chemical compounds that give real foods their taste. These scientists then concoct a cocktail of chemicals designed to mimic those flavors. The end result is something that tastes like real food, but isn't actually real food. The problem with artificial flavors lies in their deceptive nature. When we eat something that tastes like strawberries or cheese or bacon, our brain expects certain nutrients to follow. But with artificial flavors, there are no nutrients to be found. Our bodies are left confused, wondering where the vitamins and minerals are that should accompany those familiar tastes. This confusion can have serious consequences for our health. Studies have shown that people who consume a diet high in artificial flavors are more likely to develop a host of health problems, including obesity, diabetes, and heart disease. The reason for this is simple: when our bodies don't receive the nutrients they expect, they signal to our brains that we need to keep eating until we get those nutrients. This can lead to overeating, as our bodies desperately search for the missing nutrients. In this way, artificial flavors can contribute to the obesity epidemic that is currently plaguing our society. But the harm doesn't stop there. Artificial flavors have also been linked to other health issues, such as allergies, asthma, and even cancer. The chemicals used to create artificial flavors are often untested and unstudied, meaning that we don't fully understand the long-term effects of consuming them. This is a risky game to play with our health, as we may not realize the damage these chemicals are doing until it is too late. In the end, artificial flavors may taste good in the moment, but the harm they can cause to our health is not worth the temporary pleasure they provide.
