Carbohydrates trigger insulin secretion from "summary" of The Obesity Code by Dr. Jason Fung

When we eat carbohydrates, our bodies break them down into glucose, which then enters our bloodstream. As blood glucose levels rise, our pancreas releases insulin to help usher the glucose into our cells for energy. This is a normal and necessary process to maintain our blood sugar levels within a healthy range. However, the problem arises when we consume an excessive amount of carbohydrates on a regular basis. This constant influx of glucose into our bloodstream leads to chronically high levels of insulin being secreted by the pancreas. Over time, our cells can become resistant to the effects of insulin, requiring even more insulin to be produced to lower our blood sugar levels. High levels of insulin in the blood not only promote fat storage but also inhibit the breakdown of stored fat for energy. This can lead to weight gain and difficulty losing weight, as our bodies are constantly in fat storage mode due to elevated insulin levels. Moreover, constantly high insulin levels can also contribute to the development of insulin resistance, a condition where our cells become less responsive to insulin's effects. This can further exacerbate the cycle of high insulin levels and weight gain, leading to an increased risk of developing type 2 diabetes and other metabolic conditions. By reducing our intake of carbohydrates, especially refined sugars and processed grains, we can lower the amount of insulin our bodies need to produce. This can help improve insulin sensitivity, promote fat burning, and aid in weight loss. Prioritizing whole, unprocessed foods like vegetables, fruits, nuts, seeds, and whole grains can provide us with the necessary nutrients without causing large spikes in blood sugar and insulin levels. In summary, carbohydrates play a crucial role in triggering insulin secretion in our bodies. By being mindful of our carbohydrate intake and opting for whole, nutrient-dense foods, we can help regulate our insulin levels, support weight management, and reduce our risk of metabolic conditions associated with insulin resistance.
